Cabernet sauvignon has long been recognised as an excellent variety in our district. The addition of some cabernet franc gives complexity and merlot fills out the palate. Fifteen months maturation in oak adds yet another dimension to this complex wine, which is dominated by fragrant blackcurrant aroma and flavour, and comes from the oustanding 2002 vintage. The wine is full-bodied, has not been cold stabilised and so may deposit a harmless crystalline deposit in bottle. Cellaring potential is at least 10 years in good conditions. This wine has been sealed with screwcaps for our domestic market to ensure its freshness and consistency.

VINEYARDS

This wine is made from 86 per cent cabernet sauvignon, 12 per cent cabernet franc and 2 per cent merlot grown on the following Clare Valley vineyards:

— Cherax Hill (Paul and Mel Jenner)

— Fairfield (Grant Crawley and partners)

— Sweet Briar (Michael Doyle)

— St Clare (Justin and Julie Ardill, and partners)

WINEMAKING

All components of this blend were fermented to dryness on skins before being pressed. All pressings have been returned to the wine. It then spent 15 months in French (one third new) oak in our cool room before blending, fining and bottling in September 2004.

pH: 3.47 Acid: 6.51g/L

Volatile acidity: 0.51g/L

Alcohol: 14.1%
